"In pioneer days, every family had chickens. Sometimes eggs were very abundant. The pioneers preserved them in several ways. To store eggs for an extended periods of time, the pores of the shell must be sealed. Dipping the eggs in paraffin is an effective technique to keep them fresh. When dipped in paraffin the eggs can be stored for up to 2 years! Freezing is also an excellent way to keep eggs. Break them into ice cube trays and freeze. Store in a plastic freezer safe bag. Powdered eggs can be stored for a long period of time (typically 5 years) and used in all baking needs." (Vicky Tate, Cookin' with Home Storage, p. 164)
